Wet Markets
So many times I skipped lunch, as I would have to sleep off my over indulgence, leaving my restaurant to the kitchen crew.
Wet markets (good ones I mean) are a chef’s paradise – to see the day’s catch, or fresh fruits and vegetables arrive in the middle of night, and for you to pick the best bargain. As a Brit, I am used to stick hygiene standards in the markets and shops; unfortunately, a high percentage of the Manila wet markets I have visited lack this, and thank God that the Asian Bird Virus has not hit us yet. I think this is due t luck than anything else. I hope our readers forgive me in my criticism, but I have high standards when it comes to hygiene, weather it is in kitchen, dining area or anywhere that food is stored or sold. But enough of that!
